1. Quick Tamarind Sauce:
To make this sauce, you will require ingredients such as:
- Tamarind pulp, 1 cup
- Brown sugar, 1 tsp
- Water, 2 cups
- Ginger powder, 1 tsp
- Cayenne Pepper, a pinch
- Cumin
- Garam masala, a pinch
- Salt powder, as per taste
How To Make:
- At first, you need to mix hot water with tamarind pulp and mix using a spoon.
- Leave it for half an hour. Then strain the water into a pot.
- Then add all other ingredients and boil the mixture on slow heat until it becomes thick.
You can serve this tasty Tamarind Sauce with poppadoms or samosas.
2. Sweet & Sour Tamarind Sauce:
To make this sauce, you will require ingredients like
- Tamarind extract, 1-2 cups
- Dark brown sugar, 1 tsp
- Cumin seeds
- Salt, as per taste
- Water, 1 cup
- Red chilli flakes, 1 tsp
- Chopped dates, half a dozen
How To Make:
- First soak dates in hot water to soften them.
- Drain the water and store it.
- Now, mix the tamarind extract with chopped dates and dark brown sugar in a blender.
- Add red chilli powder, salt & toasted cumin powder & mix well.
- Then, pour in the liquid stored earlier. This may be kept in the fridge for a week or so.
3. Tangy Tamarind Sauce:
Serve this sauce with Gallo Pinto, grilled meats, chicken, or fish, or use it as a marinade.This lovely sauce will make the dullest of dishes interesting You will need ingredients like:
- Tamarind Purée, 1 cup
- Salt to taste
- Chopped onion, 1 cup
- Water, 1 cup
- Ground cumin, 2 tsp
- Garlic cloves, 4-5
- Jalapeño pepper, 1 tsp
How To Make:
This sauce is quick to prepare. You simply need to blend all the ingredients together in a food processor until it becomes smooth.
4. Hot & Sweet Tamarind Sauce:
This sauce contains a lot of flavours like spiciness, sweetness and sourness. It goes every well with both a meal or a simple evening snack. You will need ingredients like:
- Tamarind pulp, 1 Cup
- Dates, 6 nos
- Salt to taste
- Red chilli powder, 1 tsp
How To Make:
- You will need to soak dates and tamarind in water in separate bowls.
- They should be soaked for a couple of hours or so.
- Discard seeds from pulp and strain using a sieve.
- Now mash the deseeded dates and mix with tamarind strained solution.
- Then add spices and water. Boil on low heat till it becomes thickened.
- Store it in an airtight container or jar.
5. Tamarind-Ginger Sauce:
This sauce with the sourness of tamarind and spicy flavour of ginger goes very well with fish based dishes. You may also try it with scallops. You will need ingredients like:
- Extra virgin olive oil, 2 tbsp
- Chopped onions, 1/2 cup
- Minced ginger, 1 tsp
- Dijon mustard
- Fresh lime juice, 1 tsbp
- Honey, 1 tbsp
- Water, 1 cup
- Tamarind pulp, 1 cup
- Cayenne powder, 1 tsp
- Coriander powder, 1 tsp
How To Make:
- At first, you will need to heat up oil in a pan. Sauté fry the garlic, ginger and onion for a few minutes in it.
- Next, add ingredients like mustard, honey, lime juice and vinegar.
- Stir fry on slow heat for some time.
- Then, add some water and stir in the tamarind paste in the pan.
- Boil on low heat and add salt, cayenne and coriander.
- You can cook while stirring for 10 to 15 minutes, and the sauce will become thickened.
- Optionally, you can make a puree of it in a blender.
